Roasted Rosemary Nuts

Happy Tuesday Foodies! Today we have for you a recipe for some super tasty Roasted Rosemary Nuts. Now, I’m going to warn you that this are ridiculously addictive. We made a batch over the weekend, and we could not stop eating them. We had a couple jars sitting on the counter, and we kept opening them and snacking on them. They make a great snack, that is fairly healthy but also so so satisfying. I think that they would also make a great salad topper if you’re looking to add some crunch and flavour to your salads.

These nuts have a little bit of everything. They are nutty (obviously), a little sweet from the honey, a touch of salt, and of course have a deep rosemary flavour. I don’t find it overpowering, but if you don’t love rosemary, then you can bring down the flavour with using half of the called for amount in the recipe.

For these roasted rosemary nuts, we used 3 different types of nuts. Pecans, Almonds and Cashews, we decided on these mainly because they are our favourite nuts. However, you honestly can use any type of nuts; whatever your favourite are. I just want to put it out there when purchasing gluten free nuts. The CCA (Canadian Celiac Association) has said that we (gluten free people) no longer have to worry about nuts being specifically marked gluten free. However, I always like to stay on the safe side.

Our favourite nut company that we buy from regularly and that are labelled gluten free is, Organically Yours. We usually can find this brand at Walmart or Sobeys. If you’re buying the raw, unsalted ones, they will be refrigerated, mostly in the produce section. If you’re looking for the roasted, salted nuts they won’t be in the fridge. We use these nuts for so many different uses. Such as, to make homemade cashew milk, to roast – like this recipe, to add in salads, desserts, yogurt toppers, etc. Truly so many possibilities.

Rosemary Nuts Packaged Up

This recipe is so simple and easy. All you have to do is throw everything into a bowl, mix it together and spread it on a baking sheet. Pop it in the oven for 15 minutes, let them cool and enjoy. These make a great snack at home or at the office. They also make a great gift. Everyone loves homemade gifts, and everyone especially loves to receive food, so there is no going wrong with these roasted rosemary nuts.

  1. Preheat the oven to 350°F. Prepare a large baking sheet with parchment paper. In a small microwave safe bowl melt butter for 10-30 seconds in microwave.
  2. In the same bowl add in the honey, soy sauce and salt. Set aside. In a large bowl place all the raw assorted nuts and the chopped rosemary. Pour over the butter-honey mixture. Toss to coat all of the nuts evenly.
  3. Spread the coated nuts on the prepared baking sheet. Place in preheated oven for 15 minutes or until bubbling. Once done, take out and let cool completely. Serve or store in an air-tight container/jar.
