Classic Chocolate Chip Cookies
Gluten Free Classic Chocolate Chip Cookies that are soft and full of flavour. A combination of naturally gluten free ingredients that results in a balanced cookie with lots of chocolate chips.

  1. Preheat oven to 350°F. Prepare 2 baking sheets with parchment paper.
  2. In a large mixing bowl, place the shortening. Using a hand mixer on medium cream the shortening. Then add in the egg and mix until they are well combined. Add the sugar and vanilla extract to the bowl and cream together with the shortening and egg mixture. Mix until combined.
  3. Add in the almond flour, arrowroot flour, coconut flour, baking soda and salt. Mixing until well combined. Drop in the chocolate chips and combine using a spatula or your hands.
  4. Take some of the dough and roll them into 1 inch balls using your hands. Place them spread out evenly on the baking sheets. Press each ball down until they are about 1/2 inch flattened. Place baking sheets in oven for 10-12 minutes.
  5. Once done cooking, take out of oven. Let cool for 5-10 minutes.
